Ingredients

  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh parsley, divided
  • 1/2 cup grated Parmesan cheese
  • 2 boneless, skinless chicken breasts, halved lengthwise and pounded to 1/4-inch thickness
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 cup dry white wine
  • 1/2 cup chicken stock
  • 2 cloves garlic, minced
  • 1/2 lemon, juiced

Directions 

Step 1:

In a shallow bowl, whisk together the eggs, salt, pepper, 1/8 cup parsley, and Parmesan cheese.

Step 2:

Place chicken breasts in a shallow dish and coat both sides in flour. Dip chicken in the egg mixture, making sure to coat both sides completely. Shake off any excess egg mixture.

Step 3:

Heat the olive oil and butter in a large skillet over medium-high heat. Add chicken to the pan and cook for 4 minutes per side, or until golden brown and cooked through. Transfer the chicken to a plate and set aside.

Step 4:

Pour the white wine into the skillet and bring to a boil. Reduce heat to low, and let the wine simmer for about 1 minute. Add the chicken stock, garlic, and lemon juice. Simmer for 5 minutes or until the sauce is slightly thickened. Stir in the remaining 1/8 cup of parsley.

Step 5:

Return the chicken to the skillet and coat with the lemon sauce. Serve immediately.
